- 4 pieces boneless, skinless chicken breasts About 6 ounces each.
- 1 cup fresh spinach Chopped.
- 4 oz cream cheese Softened.
- ½ cup shredded parmesan cheese
- 1 clove garlic Minced.
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon olive oil
- ½ teaspoon Italian seasoning Optional.
Preheat the oven to 375°F (190°C).
In a mixing bowl, combine the chopped spinach, softened cream cheese, shredded parmesan cheese, minced garlic, salt, black pepper, and Italian seasoning (if using). Mix until well combined.
Carefully slice a pocket into each chicken breast, ensuring not to cut all the way through; leave about half an inch intact at the bottom.
Stuff each chicken breast with the spinach and cheese mixture, securely closing the pocket using toothpicks or kitchen twine.
In a skillet, heat the olive oil over medium-high heat. Sear the stuffed chicken breasts for about 2-3 minutes on each side until golden brown (optional).
Transfer the chicken breasts to a baking dish and bake in the preheated oven for 20-25 minutes or until the internal temperature reaches 165°F (75°C).
Once cooked, remove from the oven and let the chicken rest for 5 minutes before serving.
You can customize the filling with your favorite ingredients, such as sun-dried tomatoes or herbs.
Serve with a side of roasted vegetables or a salad for a complete meal.
