- 1 pound sausage Italian or your choice
- 2 cups bell peppers, sliced Mix of colors
- 1 cup red onion, cut into wedges
- 2 cups zucchini, sliced
- 2 tablespoons olive oil
- 2 teaspoons dried oregano
- 1 teaspoon garlic powder
- salt and pepper To taste
- fresh parsley For garnish (optional)
Preheat your oven to 425°F (220°C).
In a large mixing bowl, combine the sliced bell peppers, red onion, and zucchini.
Drizzle the olive oil over the vegetables and sprinkle with dried oregano, garlic powder, salt, and pepper. Toss until well coated.
Spread the seasoned vegetables evenly on one side of the sheet pan.
Slice the sausage into bite-sized pieces and arrange them on the other side of the sheet pan.
Place the sheet pan in the preheated oven and roast for 25-30 minutes, or until the sausage is browned and cooked through, and the vegetables are tender and slightly caramelized. Flip the sausage and vegetables halfway through for even cooking.
Remove from the oven and let it cool for a few minutes before serving. Garnish with fresh parsley if desired.
Feel free to customize the vegetables based on your preferences or what you have on hand. Carrots, broccoli, or asparagus work well too.
This dish is great for meal prep; just store leftovers in airtight containers in the fridge for up to 3 days.
Pair it with crusty bread or over a bed of rice or quinoa for a heartier meal.
