- 1 cup whole milk warmed
- 4 tablespoon butter melted
- 1 cup sour cream
- 1 cup shredded cheddar cheese plus more for topping
- ½ cup cooked bacon bits
- 2 green onions chopped
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt or to taste
- ¼ teaspoon black pepper
- 1 cup water for pressure cooking
- ¼ cup cream cheese softened
- ½ teaspoon paprika optional for garnish

- Place peeled and chopped potatoes in the pressure cooker with 1 cup of water.
- Seal and cook on high pressure for 10 minutes. Quick release when done.
- Drain any excess water and return potatoes to the pot.
- Add milk, butter, sour cream, cream cheese, garlic powder, onion powder, salt, and pepper.
- Mash everything together until well combined and creamy.
- Stir in shredded cheddar, cooked bacon bits, and green onions.
- Transfer mixture to a greased casserole dish and top with more cheese and paprika if using.
- Bake under the broiler for 5-7 minutes until cheese is bubbly and golden.
