- 1 lb Green beans trimmed and halved
- 2 tablespoon Butter unsalted
- 1 Onion diced
- 2 cloves Garlic minced
- 8 oz Mushrooms sliced
- ¼ cup All-purpose flour
- 1 cup Chicken broth low sodium
- 1 cup Milk whole
- ½ teaspoon Salt or to taste
- ¼ teaspoon Black pepper
- 1 ½ cups French fried onions divided

- Preheat oven to 350°F (175°C).
- Blanch the green beans in boiling water for 3-4 minutes, then transfer to ice bath. Drain and set aside.
- In a large skillet over medium heat, melt butter and sauté onions until soft.
- Add garlic and mushrooms, cook for 5-7 minutes until mushrooms release moisture and brown.
- Sprinkle in flour and stir constantly for 1-2 minutes.
- Slowly whisk in chicken broth and milk, then season with salt and pepper. Cook until thickened.
- Stir in cooked green beans and 1 cup of French fried onions. Mix well.
- Transfer mixture to baking dish, top with remaining onions and bake 20 minutes until bubbly and golden.
Notes
Make ahead of time and store in refrigerator until ready to bake. Great as a side for Thanksgiving or Christmas.
